Improve formatting of downloaded EchoVideo transcript TXT files

Problem
When instructors download a transcript from an EchoVideo capture as a TXT file, the content is not formatted in a way that is easy to read or reuse.
Instructors who want to upload the transcript to their LMS as an additional accessibility or learning resource must manually reformat the file first.
This creates unnecessary work, particularly for longer recordings, and may discourage instructors from providing transcripts as standalone resources.
User benefit
A properly formatted transcript would allow instructors to download the file and add it directly to their LMS as an additional resource. This would save time, improve accessibility, and provide students with a cleaner and more readable transcript.
