Kent State is also requesting something similar. Here is the email I received:

"is there a way to pause student submissions? Once the due date passes, we’d like to disable submissions while they are being graded. Reason being, we had a student who saw her grade and the comments and then quickly went on and submitted more documents. This shouldn’t be permitted until after grades have been finalized and they have an opportunity to revise."
